Cauliflower Cheese with bacon

This is an ideal Keto or Low Carb, fast to prepare, dinner and ticks my health requirement boxes to include it as a recipe.

Cauliflower is a member of the cruciferous family (cabbage, kale, sprouts broccoli) and although it does not enjoy the powerful health benefits of its greener siblings, it still packs a nutrient punch. An excellent source of Vitamin K and C, if cooked lightly and a good source of fibre, potassium and B vitamins. Also a source of boron which is helpful to women for bone health and menopausal health.

Cheese is a great source of calcium, and as it is an animal fat, I suggest eating it small quantities and choosing the lower fat cheese when you can. Grated cheese makes it go further.  This recipe is great for Bone Health.

Makes 1 serving

200g, 1/2 head small cauliflower

30g, grated mozzarella cheese

50g, 2 smoked rashers, fat trimmed away

black pepper


Wash the cauliflower florets and steam them for 5 to 6 minutes. Heat destroys Vitamin C so steaming for a short time may be better than boiling.

Have the grill re-heated.

Trim away the fat off the rashers and fry them in 1 teaspoon of olive oil. I prefer to use plant fat instead of animal fat. My frying pan is easier to wash than the grill after cooking rashers. Alternatively grill the rashers.

Using a scissors, chop up the cooked rasher over the cauliflower and scatter the grated cheese on top. Grill the cheese briefly to melt it.

Cheddar cheese will add more colour and flavour. You choose your cheese and adjust the APP.
