Broccoli Stilton Soup

In my personal experience, soups are the best weight-loss food. They leave you feeling fuller for longer and there are research trials to back up that fact.

On a Low-Carb food plan, you can enjoy strong-tasting high-fat cheese in your food. A little goes a long way.

Ingredients

Makes 2 servings

1 chicken stock cube x 500ml water

(optional) 100ml dry white wine

310g, 1 small head of broccoli

130g, 1 small leek

50g, Cream Cheese

50g stilton cheese

Method

Dissolve the stock cube in boiling water and add to a saucepan with the wine on a high heat to bubble off the alcohol

Wash & chop the broccoli, including the stalk, and the leek and add to the saucepan, reducing the heat to moderate, to soften for 3 to 5 minutes

Blend the contents of the saucepan into a smooth liquid.

Stir in 50g of a cream cheese which improves the texture

Crumble in the stilton cheese and return to a moderate heat for the ingredients to blend together.
