

Chickpea Salad with a warm protein & low carb bread
In general, beans provide a good fibre for the bowel in the form of lignans and mucilages. When we lose weight we are detoxifying as toxins are stored in our fat cells for safety, away from our organs and blood steam. Chickpeas and other beans provide molybdenum, a trade mineral that detoxifies sulphites. Sulphites are found in wine.
Servings : 6 (recipe makes 600g)
1 Serving chickpea salad (100g): 8.8g Carb kcals 114 Protein 3.3g Fat 6.6g Fibre 3.8g
Add 100g of warm Chicken and 50g Rocket to total : 9g Carb Kcals 271 protein 37g Fat 9g Fibre 5g
Add 1 slice, 40g, low-carb bread (made with psyllium husk ) : 13g carb Kcals 433 Protein 44g Fat 22g Fibre 8g
Ingredients
Chickpea Salad – makes 600g
400g, 1 tin of Chickpeas, drained 240g
20g, a small chunk of red onion
80g, 1/4 of a cucumber, chopped
35g, 1/4 of a red pepper, chopped
80g, half a green pepper, chopped
15g, 3 sun-dried tomatoes in oil, chopped
70g, 1 small avocado, chopped
50ml, 1 juiced lemon
20g, a big squirt of sun-dried tomato puree
15ml, 1 tablespoon of olive oil
25g, a large handful of flat-leaf parsley, finely chopped
Salt & pepper
Salad
50g Fresh salad leaves
100g, torn chicken,
Method
Empty the chickpeas into a sieve and wash well under a cold tap
Chop all the other ingredients and drench in lemon juice to stop them browning
Mix all of the ingredients together
I roasted an entire chicken and will take a serving for lunch or dinner over the next few days. Great time-saver and if there is a big family, roast 2 chickens.
