Eggs Rashers & Spinach

Eggs are a complete protein, containing all the amino acids needed to maintain and repair muscle, tissue and organs. They contain a good mix of fats. Just add veggies to your plate –  I chose mushroom and spinach as they are low in carbohydrate.

2 eggs

1 teaspoon olive oil (5ml)

2 smoked bacon rashers (100g) or turkey rashers

Spinach (200g)


Turn on the grill. Fry 2 eggs in a non-stick pan in olive oil.

Grill the rashers (7 mins).

Steam the spinach (1 min) then add to the frying pan after the eggs are cooked and season with salt and pepper. Spinach shrinks down to a very small amount.
