Smoked Mackerel Salad

Omega 3 is one of the best anti-inflammatory nutrients and mackerel is an oily fish, small and relatively sustainable. If you struggle to cook fresh mackerel (as it is too strong a fish taste for some clients), the smoked pepper mackerel is a quick, cheap and tasty alternative.

You can add any vegetables you fancy. Grated carrot, tomatoes, cucumber, olives and topped with nuts. If you love grapes chop up 2 to 3 and add them.

Ingredients

75g, a fillet of peppered mackerel (skin removed)

50g, cheesy chipotle coleslaw from Dunnes

80g rocket

10-15g red onion, chopped

fresh lemon juice

 

Method

I mixed the chipotle coleslaw into the rocket and served the mackerel on top.
