Tart peppers, gherkins and sauerkraut

This is a recipe for the trillions of  bacteria that live in the gut. Sauerkraut is fermented cabbage. The fermentation process makes food easier to digest.

Onions are a top prebiotic food, helping healthy bacteria to grow in numbers.

Vinegars help digestion by stimulating the production of stomach acid.

Tart, acidic notes help to satisfy appetite, thereby helping weight-loss.

Ingredients

1 large red pepper

1 green pepper

100g or 4 pickled Gherkins

10 cherry tomatoes

100g, 1 heaped cereal spoon  Sauerkraut

1 medium red onion

2 teaspoons flax oil

2 teaspoons of vinegar

1 teaspoon of mustard seeds

Method

Slice the peppers, gherkins and onions thinly and halve the tomatoes

Add to a bowl with all the other ingredients and mix well

I buy the Kuhne brand of gherkin and sauerkraut from the supermarkets

I use the marinade from the gherkin jar as it is just lovely!

Shop bought jars of sauerkraut are likely be pastuerised and not as beneficial as homemade sauerkraut. Pasteurisation involves heating which kill off some if not all of the bacteria.
